Grilled Cheese with Havarti, Mushrooms, and Onions

Crispy, buttery grilled cheese stuffed with sautéed mushrooms and sweet onions. Perfect for a quick weeknight dinner.

  • Electric or stovetop griddle


  • 1 tbsp olive oil
  • ½ cup mushrooms
  • cup sweet onion, thinly sliced
  • 1 tbsp butter or Smart Balance
  • 2 slices bread of your choice
  • 2 slices Havarti cheese


  • First, preheat your griddle to 350°F. Add olive oil, mushrooms, and onions. Sauté until mushrooms are soft and onions are slightly golden brown.
  • Toast the slices of bread. Spread a thin layer of butter or smart balance on the outsides of the bread. Add it to the skillet.
  • Add one slice of Havarti cheese to one slice of bread. Then add on the mushrooms and onions. Top it with the second slice of Havarti cheese. Add the second slice of bread. Cook for about 4 minutes on each side until bread is lightly golden brown.
  • Cut in half and enjoy!
