Peanut Butter Chocolate Rice Crispy Treats

Equipment

  • Microwave-safe bowl
  • 8x8 baking dish
  • Baking sheet

Ingredients
  

  • 1 cup peanut butter all natural
  • cup honey or maple syrup more or less to taste
  • ½ tsp vanilla extract
  • 4 cups brown rice cereal
  • ¼ cup hemp seeds optional
  • ½ cup chocolate chips
  • 1 tbsp coconut oil

Instructions
 

  • To a medium microwave-safe bowl, add peanut butter, honey, and vanilla extract. Microwave at 30-second intervals until a smooth consistency is achieved.
  • Add brown rice cereal and hemp seeds (if using) to the peanut butter mixture. Stir until well-combined.
  • Spread mixture evenly in an 8×8 glass baking dish sprayed with cooking spray or lined with parchment paper. Chill in the fridge for 1 hour.
  • Remove baking dish from fridge and cut into 8 equal bars.
  • To a medium microwave-safe bowl, add chocolate chips and coconut oil. Microwave at 30-second intervals until a smooth consistency is achieved.
  • Dip each rice crispy treat into the chocolate mixture and place on a parchment-lined baking sheet or serving tray. Cool in the fridge for 1 hour or until hardened.
  • Store in a sealed container in the fridge for up to 1 week.

Notes

This recipe can easily be made vegan by using maple syrup instead of honey and vegan chocolate chips in place of regular chocolate chips.
If you prefer a less sweet version, use 1/4 cup sweetener instead of 1/3 cup.
Any drippy nut butter (e.g. almond butter) can be substituted for the all-natural peanut butter.
Instead of hemp seeds, try adding other seeds such as flax seeds or chia seeds and let me know how you like it!
