Popcorn Trail Mix

I am always on the lookout 👀  for quick and easy snack recipes. Some of my faves include hummus with cucumbers and yogurt with berries. Those both obviously require refrigeration. Today, I have a snack recipe for you that can travel anywhere. This Popcorn Trail Mix is perfect no-refrigeration-required snack to portion into ziploc bags and take on-the-go! 😀

Today also happens to be National Popcorn Day! So what better way to celebrate than whipping up a batch of this trail mix and eating it throughout the rest of the week?

How to make Popcorn Trail Mix:

To make this quick and yummy snack, just toss everything into a big bowl and mix. I use my Instant Pot Popcorn recipe to make the popcorn for this recipe. You could also use microwavable or bagged popcorn.

I think it tastes best when unsalted popcorn is used in this trail mix recipe, otherwise everything can taste too salty. You can use roasted and salted nuts for that perfect sweet and salty combo.

This recipe is totally customizable based on what you have in your pantry. You could add different kinds of nuts, seeds, dried fruit, or even pretzels to this recipe. I found that about 1/2 cup of each mix-in is a good proportion to the 6 cups of popped popcorn.

This snack is full of healthy fats and fiber. It is satisfying, sweet, salty, and crunchy. If you’re like my husband, you may eat the whole container in one sitting. 🤣

Is Popcorn Trail Mix gluten free?

Yes! This recipe as written is gluten free. To keep it gluten free, make sure that any add-ins you use are gluten free as well.

Is Popcorn Trail Mix vegan? 

This recipe as written is not vegan because it contains dark chocolate chips. If you use a vegan chocolate chip, then it would be vegan.

Sizzling Tip:

If using fresh popped popcorn, make sure you let it cool down first before you mix it with the other trail mix ingredients. You don’t want your chocolate chips to melt!

Ingredients
  

  • 6 cups popped popcorn
  • ½ cup roasted and salted almonds
  • ½ cup roasted and salted cashews
  • ½ cup dried cranberries
  • ½ cup dark chocolate chips

Instructions
 

  • Mix all ingredients in a large bowl. Portion out into smaller containers or baggies if desired.
