Now that the temperatures are warming up, I find myself wanting to use my Blackstone griddle pretty frequently. My recipe for this Blackstone Breakfast Scramble with sausage and potatoes is perfect to whip up on a spring/summer morning. It is great to feed a crowd. I can’t wait for you to try it!
This recipe makes enough for about 6 servings, so it’s perfect for a big family or a small family with big appetites. If you have guests spending the night, impress them with this delicious breakfast in the morning!
Ingredients for Blackstone Breakfast Scramble:
This recipe is definitely versatile, and there are many substitutions that you can make. Here are the main ingredients for this version and some different ingredients you could substitute:
- Ground breakfast sausage – you could substitute bacon, turkey bacon, or chicken sausage
- Russet potatoes – you could try this recipe with baby potatoes or sweet potatoes
- Peppers and onions – use any combination of red, white, or yellow onion mixed with any color bell pepper
- Eggs – use whole eggs or any combination of whole eggs and egg whites
- Cheddar cheese – use any shredded cheese that you have on hand
How to make a delicious breakfast on the Blackstone griddle:
Gather the diced potatoes, bell pepper, and onion on a large pan. Whisk eggs in a medium-sized bowl. Grab the shredded cheese, salt, and pepper. Bring all the ingredients outside. Preheat Blackstone griddle to medium-low heat.
Lightly oil the Blackstone griddle. Add diced potatoes to one side. Cook the potatoes for about 6-8 minutes before adding the ground sausage to the other side.
Cook and crumble the ground sausage until browned. Cook the potatoes, flipping occasionally until crispy on all sides. This will take an additional 6-8 minutes. I like to add some water to the Blackstone and close the lid to help steam the potatoes nicely.
Move the potatoes and sausage to one side of the Blackstone. Add the peppers and onions to the griddle and cook until slightly softened, about 2-3 minutes.
Mix all the ingredients on the Blackstone together and push to one side. Finally, add the whisked eggs and use a spatula to quickly move them around on the griddle. They will cook extremely fast; it will take less than 30 seconds for the eggs to be cooked.
Stir the eggs in with the rest of the scramble. Season to taste with salt and pepper. Add the shredded cheese and let sit for a few minutes to melt.
Remove the scramble from the Blackstone griddle and serve while it’s hot. Enjoy!!
What if I don’t have a Blackstone griddle?
If you don’t have a Blackstone, you can cook this inside on a cast iron pan. I would recommend reducing the ingredient amounts by half so that it can fit in a 10-inch or 12-inch cast iron skillet.
